Ravioli, now world-famous, were invented in Liguria. There are various stories, none fully verifiable, as to who first folded a rectangle of pasta dough over a filling of meat, cheese, or vegetables to create a raviolo. One story holds that the name comes from the Italian verb ravvolgere, which means to fold over. Other people insist that the name comes from the family in the town of Novi Ligure who first invented this pasta. It is generally conceded that ravioli were first prepared at or near Novi Ligure, which is in a valley north of Genoa on the Piedmont border. Ravioli are also popular in Piedmont, where they are often larger and called agnolotti.
