The sun and sea air of Liguria, combined with the skillful agricultural abilities of the local populace, have made this region heaven on earth for vegetarians. There is an infinite variety of greens and herbs, all of superb quality and flavor, and one can live happily for months without ever eating meat.
Essentially, Ligurians do as little as possible to their vegetables, understanding that Nature made them perfect already. Usually, a bit of steaming or sautéing in olive oil is all that most greens might require. You should devote yourself to getting to know when greens and other vegetables are at their peak — this will deliver the most flavor as well as the most nutritional content.
