In the interest of love, here is a selective, but by no means exhaustive, list of essential ingredients of the Ligurian kitchen. Most of these foods are described in more detail elsewhere in this book. I cannot be emphatic enough in my insistence that you use the very best ingredients available to you. While this philosophy is applicable to all types of cooking, it is especially so as regards Ligurian food because it is based entirely on the outstanding and distinct flavors of its raw materials.
