Salumi means preserved meat – the equivalent of the French charcuterie – all those pork products that are eaten sliced. There are almost as many ways of preserving pork in Italy as there are cheeses. Most of them, like the bacons and salami, keep well. But a few, like Coppa Senese, for which I have given a recipe, and cotechino, described below, though preserved, should be eaten within 3 days.
