With completely new kitchens and a new menu, we opened. The Great British Classics – faggots, fish cakes, boiled bacon, cod and parsley, oxtails – were back in town. We have enjoyed an amazing success. In 1991, we were voted The Times’ Restaurant of the Year by one of my favourite food writers, Jonathan Meades. He always writes about what he finds and feels, which is exactly the way that I cook. He had already eaten my food at the Castle, and I just knew, when I saw the order in the Greenhouse kitchen for faggots as a starter, followed by braised oxtail and bread and butter pudding, that it had to be him! The fact that he was testing my faggots again confirmed to me that, once having achieved a high standard, that standard has to be maintained and developed.
