Yes indeed! The second favourite dish of our fellow French citizens is couscous. It follows close on the heels of blanquette (traditional stew) on the list of delicacies dear to us all. What a friendly poke in our gastronomy’s ribs, and what a magnificent symbol of openness to other cultures. We share their culture and it forms part of our roots, we eat their food and it becomes part of our everyday lives. Borders may well stand firm, but culinary sharing is international. Salima upholds her culture in its traditions and knowledge, but she also has this notion of sharing, both in her generosity in giving and also in her generosity in learning. This double sharing, at once strong and so simple (because it is so natural), is the cornerstone of a functioning society.
