Good food starts with fine fresh produce, and if you want to cook well you must first pay attention to the quality of your produce. The front page of the Rockpool menu lists our suppliers; I recognise that without their support and commitment to the finest, all our efforts in the kitchen would be in vain. Build up a good relationship with your butcher, baker, fishmonger and vegetable supplier. Don’t be afraid to ask for the best and to complain if the produce is not up to scratch. Producers will soon realise it’s easier to look after you in the first place than earn your wrath. Suppliers who are interested in quality will welcome your enthusiasm, and those who don’t are best ex-suppliers. If chefs work closely with their suppliers they can help change things for the better. It’s all a matter of supply and demand - if you demand the best all the time, the message will finally get through. Chefs, suppliers and growers or producers have worked together in Australia to make available a wide variety of quality produce in a very short span of time in our culinary history.
