Risotto is like the warmth and love of a family; it nourishes not only the body, but the soul as well. I always have an incredible feeling of well-being when I eat a good risotto; you can almost feel the goodness from the creamy stew of rice and its flavouring partners.
Although most Italians would eat risotto as a second course after the appetiser and before the main, I much prefer it as a course on its own, with good bread, olive oil and a glass of sound wine, followed by a salad. Risotto is one dish you can serve your friends at home, knowing that it’s better than 99 per cent of those served in restaurants.
