Hanukkah is also known as the Festival of Lights. It occurs on the twenty-fifth day of Kislev, which usually falls in December, and lasts eight days. It refers to the battle in which the Macabees defeated the enemy and recaptured Jerusalem. Although the lamp in the Temple appeared as if it had enough oil for only one night, the oil burned for eight days. To celebrate this miracle, the candles of the menorah are lit for eight consecutive evenings. Fried foods are often served at this holiday, in reference to the oil. Obviously, the entire menu would not be fried, but the following are some dishes that can be served during the eight days of Hanukkah.
