Tu B’Shevat, the New Year of the Trees, occurs in late January or early February, the time of year in the Mediterranean when the trees are just starting their early blooming. It is also called Las Frutas by the Sephardim. It is celebrated by the planting of trees. At the table, it is celebrated by eating lots of winter fruits and dried summer fruits such as dates and figs.
