Dips: The not-quite-salad salad

Now I had a bit of dilemma with this: are dips salads? The Greek certainly think so: taramasalata, melitzanosalata.... They do comprise ingredients with a sauce, and are usually served in the same manner. Well, I love dips: they are versatile enough to be vamped up into a meal, thinned down to make a dressing, and enjoyed as an anytime snack. So I have given them their own chapter anyway.
