Squab is young pigeon reared all the year round especially for consumption. They are fed on a diet of grain, peas, wheat and safflower making them more succulent and tender than the wild wood pigeon. Reared for a period of four to six weeks before being processed, they are placed head first into a killing funnel to avoid carcass damage from the flapping of their wings. The funnel is suspended from a wall to permit ease of blood drainage after the jugular vein is cut with a sharp knife. They are then dry-plucked to prevent any damage and bruising to the skin and the tender flesh.
