To check the consistency and seasoning of a savoury mousse, lightly butter a piece of aluminium foil, spoon a small amount of mousse onto the foil and roll up into a sausage shape. Drop the mousse into a small pot of simmering water and gently poach for 5 minutes. Remove from the heat and leave the mousse in the water for a further 5 minutes. Remove the mousse from the water, unwrap it and taste. Adjust the seasoning if necessary, and if the mousse is too firm, add a little more chilled cream.
