A Note On Timing

Appears in
The Secret Recipes

By Dominique Ansel

Published 2014

  • About
I always recommend reading a recipe through once before starting. At the beginning of each recipe, I’ve included the amount of ‘active time’—the time spent measuring, mixing, slicing, chopping, churning, cooking and baking the various components necessary to create these desserts. I have not included ‘inactive time’—the time spent resting, chilling or proofing these components. Of course, all of those directions are all included in the recipe itself. I’ve also written a timeline for recipes that require more than one day to complete, to give a sense of where you’re going, and where you’ve been. I hope you enjoy the journey.
