Yams for us, more than any other kind of dish, embody the essence of Thai food and cooking. They are usually translated into English as “salads, ” for the sake of a better word. Like salads, yams are often served at room temperature and use garden herbs and raw vegetables to achieve a good fresh taste. But unlike most salads, which we eat to refresh our palates, yams are anything but shy in flavor. They are quick and easy to make, absolutely full of flavor, and fun both to prepare and to eat. All we have to do is to put together a couple of different yams and a basket of hot freshly steamed sticky rice, and we’ve instantly created a special occasion.
