Basmati is also available unmilled, as brown rice. To cook plain brown basmati, follow the directions given for regular basmati, but double the cooking time and water quantity for the absorption method. If using the lots-of-water method, the boiling rice will take about twice as long to become tender; it should then be steamed for 25 minutes.
