In 2005, Tetsuya’s climbed to number four on the World’s 50 Best Restaurants list, holding at number five for the next two years. This was an amazing achievement, but my return to the restaurant hadn’t gone as I’d expected. I found myself back in the kitchen doing full-time cooking every service.

At the end of 2006 Vicki and I were approached by an industry supplier with a new career opportunity. A high-end restaurateur in Hong Kong and China was looking for consultants to help set up new restaurants in Shanghai and Beijing.
