In this section I will provide the basics for making great Sri Lankan curries, starting with the curry powders.
My grandmother used to make these curry powders into pastes by grinding them with a little water. She would have a row of colourful curry pastes in jars lined up along the top shelf of the cupboard so you could just combine all the other ingredients for a meal, then put a small amount of the paste into each dish to create the curry.
