Frisée is an ultra-curly lettuce (actually a chicory, but who cares?) that has two benefits: Its shape traps lots of dressing, and its flavor is fairly bitter and strong, though still quite pleasant. Of course, you can make these salads with any greens you like.
A very simple, basic vinaigrette starts us off, then we move to three French classics—greens with blue cheese and nuts, greens with bacon and poached eggs, and greens with gizzard confit and lentils. Finally, the coup de grâce: a superb salad of greens, scallops, white truffles, and Parmesan.
