Egg Dishes

There is really no end to the variations of this simple theme, and one could fill a volume with recipes for cooking eggs. But the simplest are really the best, and I have purposely refrained from branching off into all sorts of elaborate fancy dishes which would not be in keeping with the spirit of this book.
