Once again I owe a tremendous debt of gratitude to my mother-in-law, Myrtle Allen, who has taught me so much over the years and who continues to inspire me—a special thank you for giving me permission to reproduce many favourite Ballymaloe recipes. My thanks also to my teachers and assistants at the Ballymaloe Cookery School, Florrie Cullinane, Susie Noriega, Fionnuala Ryan, Barbara Hogan and Greg Dawson for cheerful and unstinting support.
