Sticky Cardamom Toffee Syrup

Gently heat 150g soft brown sugar, 25ml cream, 1 split vanilla pod, 2 tbsp butter and 2 crushed cardamom pods until the sugar dissolves, then simmer for 5 minutes. Strain and serve over steamed puds, cakes and poached pears.
