Fry 1 chopped onion in 1 tbsp oil. Add 1 tsp each cumin seeds and brown mustard seeds, 2 crushed cardamom pods, 1 bay leaf, 1 cinnamon stick, salt, pepper and ½tsp each of ground cumin, coriander and turmeric. Add 300g rinsed rice and 600ml boiling water, cover and simmer very gently for 15 minutes.
