Finishing with Soft Frostings

Some frostings, such as those that have had whipped cream folded into them, are so soft that you cannot pick them up on a spatula to apply first and second coats. With these, one layer of frosting is thick enough to hide any flaws and give a soft, smooth finish. Because of their texture, it is easier and less messy to apply these frostings on a turntable. Pour most of the frosting on top of a cake in its center. Then work from the top, and draw the excess down over the sides until the cake is covered. Smooth the sides and top with the aid of the flexible metal icing spatula and turntable as previously directed.
