I could easily live on noodles. Like pasta, they are nourishing and satisfying. Although not as well known, Chinese noodle recipes are just as full of flavour as the ubiquitous pad thai and other Thai noodle dishes.
Most of the noodles listed here can be bought in supermarkets, with the exception of fresh Shanghai noodles and fresh rice noodle sheets. For these, you’ll need to go to an Asian food store.
The recipes in this chapter make a hearty first course for four or a one-bowl meal for two. This same quantity will serve between four and six in a shared-meal situation.
