Without a doubt, this is my favourite sort of Chinese cooking. The long, slow cooking method produces incredible dishes, full of wonderful flavours and textures. Simply spend a little time to assemble the braise, then walk away for the next 2 or 3 hours. Time does the cooking for you and you end up with a dish that will impress any of your friends or make a delicious meal for you and your partner. In fact, most braised dishes benefit from being made the day before, so that the flavours can develop. Plan ahead, if you can.
