A Note on Serving Sizes

Most of us eat and serve salmon as a main course and are happy with a 6- to 8-ounce portion, but many of the salmon dishes given here also make great first courses for more elaborate dinners. If you’re serving salmon as a first course or a light luncheon course, just decrease the serving sizes to about 4 ounces.
