I have always been a partisan of London smoked salmon over the much commoner Scottish. Small smoke-houses have been functioning in the capital for over a hundred years, producing a quite distinctive style of salmon. Hamburger Products was obviously one, and many others have disappeared as well. At present I am using a company called Grivan who will smoke to my specifications. Selfridges do good London-style salmon as do most good delicatessens. Finding a smoked salmon you like can be an expensive process so I recommend that when you do settle on one you stick with it.
