Smoked Trout and Sea Trout

Commercially smoked rainbow trout has never appealed to me, but in my teens I was catching lots of brown trout and smoking them in the garage in one of those little smoking kits you can still buy, and it was very good. Even better was home-smoked wild sea trout my father prepared on a fishing holiday in Scotland. Home-smoking kits will only produce hot-smoked fish. Sainsbury’s do a smoked sea trout that seems superior to their smoked salmon.
