Unless otherwise stated (it’s sometimes hard to spot), it is not necessary to refrigerate soy sauce or other salty condiments after opening. Storing them in a cool, dark area is best. These things do change with time. As the sauce is exposed to air, the area on top will darken, especially fish sauce. But for most recipes it will not make a substantial difference in taste.
