Anja and Jan Jacob Baak are from the Netherlands but have settled in Roy Bridge in the Scottish Highlands where they produce the most delicious wild venison charcuterie. Every time we have friends round, we put out their salami with a selection of cheeses, olives and pickles – it is so full of flavour and just as delicious as the traditional salamis from France or Italy.
