Consommé is double (sometimes triple) broth that has been carefully skimmed of fat and made perfectly clear by straining it through cheesecloth or a cloth napkin. Authentic consommé is expensive and time consuming to prepare because meat or fish instead of bones is used to prepare a concentrated broth, which is then further enriched and clarified with more meat or fish.
It’s not surprising that Americans show little interest in drinking consommé—most of us remember the stuff out of a can served on a tray in a sickroom. A real consommé is deep flavored, delicious, and free of fat and cholesterol.
