Dumplings are another one of those universal preparations that people all over the world have made for centuries to keep body and soul together. It’s amazing how a few tasty homemade dumplings can turn a simple bowl of broth into something interesting and substantial.
Dumplings are almost like stuffed pasta, except they contain more liquid, have a looser consistency, and—ideally—are lighter once cooked. They are necessarily a last-minute, homemade kind of thing—no doubt one reason I find them so appealing.
