Adjusting The Soup’s Texture

If the soup is too thick, obviously you can easily thin it by adding more broth, water, milk, or cream. Because thickening a soup is more difficult—you’ll have to prepare more of the puree base or add flour or cornstarch—when you’re improvising a soup or using an unfamiliar recipe, add less liquid than you think you’ll need or than the recipe calls for and then thin the soup to the right consistency at the end.

Another way to thin a soup and at the same time give it a smoother texture is to strain it through a fine-mesh strainer. Although ordinary kitchen strainers have a fine enough mesh for most soups, if you want a very fine, smooth texture, you’ll have to buy a fine-mesh strainer.
