Although most of these soups actually include more than one vegetable, they are designed so that the flavor of a single vegetable predominates.
Virtually all of them can be made days in advance and refrigerated or frozen. Just be sure the soup comes to a boil first, chill it quickly, and don’t add cream if you’re freezing it until just before it’s served.
