Celeriac

Celeriac is one of the great underrated vegetables. Although its flavor is similar to that of celery, it has an ineffable subtlety that makes it delicious in soups and purees. It’s also delicious cooked and pureed into mashed potatoes.
Don’t try to peel celeriac with a vegetable peeler; use a sharp stainless-steel paring knife instead. And once you’ve peeled it, unless you’re going to use it right away, rub it with lemon to prevent it from browning.
