Until a few years ago you were lucky to find green and red sweet peppers at the same market. Now peppers come in all colors—bright orange, yellow, and even purple. Even though the different-colored peppers have a similar taste—and anything other than green is sold at a premium—I can never resist getting a few of each just to brighten things up.
Since most recipes using peppers—though not the one that follows—have you roast and skin them, always look for peppers with smooth sides. Peppers that curl up on themselves in funny shapes are hard to roast evenly.
