Beans, lentils, and dried peas—the legumes—are wonderfully versatile and nutritious. Their gentle flavors make them a perfect backdrop for more assertive tastes such as herbs, spices, olive oil, and smoked meats. They also have the advantage of being available in several forms and are almost ridiculously cheap. You’ll find the largest variety in dried form—your best bet is an Indian or Middle Eastern grocer. I like to have three or four bags of different varieties in the cupboard so I can whip up a hearty and flavorful soup on a chilly afternoon.
