A really good green salad can be a revelation: packed with flavour, texture and colour from fiery mustard leaves to earthy rainbow baby chard, crunchy pak choi and pretty beetroot leaves (which do indeed taste of beetroot). Give your leaves a wash, spin them dry, dress simply and relish the different flavours.
