Making sausages was an important part of the pig-killing day in most country households. All the neighbours came to help and the women scrubbed out the intestines thoroughly – in the nearby stream, if there was one – ready for the saucissons secs and fresh saucisses.

To make sausages at home you can buy sausage casings and use a Porkert or other mincer to process the meat as well as funnel it into the casings once it has been seasoned (there are several brands available, hand-powered as well as electrically driven). It only remains to twist the sausage into links.
