Love from the Emmental Valley
If anyone knows cookies, it’s Ursula Kambly, who works as vice president of the board of directors, and in strategic development at the Kambly cookie factory, the company founded by her husband’s grandfather. But, like most Swiss people, her earliest memories of cookies are Christmas baking.
‘The classics,’ she says with a smile, counting them off on her Angers ‘Mailänderli, Brunsli, Zimtsterne, Spitzbuben.’
Her favourite? The elegant Vanille Kipferl.
Ursula Kambly’s grandmother also made Bretzeli for the family, an item so treasured that her mother would pack them in tins and hide them away. One year, like the squirrels, she forgot where she hid the tin and it was only discovered by chance nearly a year later. To the great joy of her family, they were in almost perfect condition and quickly enjoyed.
