Mas de Bouveau

Appears in
A Table in Provence

By Leslie Forbes

Published 1987

  • About
Between the Roman ruins of Vaison and the Roman ruins of Orange, the foothills of Mont Ventoux gradually disappear to become the Plain of Orange, flat as a copper crêpes pan. Mile after mile of vineyards stretch in all directions from the flat straight road, a road probably tramped by Hannibal and his elephants on the memorable invasion of Italy in 218 BC.
Smack in the middle of this plain is the pretty Mas de Bouveau, where the young chef transfroms Picodons à l’huile (previous recipe) into Fromage de Chèvre Grillé sur salade.
