The fish on Christmas Eve may be mullet, tuna, bream or (most often) a dish of salt cool baked with spinach & garlic. In Arles they serve stuffed mussels with salty fougasse & bacon; at Maillane, Mistral’s home near St. Rémy, there is a dish of tiny squid called Tripes de mer - sea tripe
