The worldwide interest in cuisines of other cultures has made the most obscure of ingredients surprisingly commonplace. Korean cuisine has also changed in a number of ways, utilizing certain Western ingredients for taste and style as the popularity of fusion cooking has grown. However, the distinctive properties of certain authentic ingredients are irreplaceable.

Short grain rice; sweet potato noodles; thin buckwheat noodles; and handmade flat noodles. These four ingredients provide the foundation for the majority of Korean dishes.
