The Waas bakery in Walls, to the north-west of mainland Shetland, was bought over by an enterprising American, Bruce Gilardi, in 2016. He had family roots to the isles dating back to the 1890s. He rebranded the bakery and introduced many new products, both contemporary and traditional. Bruce sadly died in 2018 but then his legacy lived on, in the careful hands of head baker Gary Worrall, who was baking guru Dan Schickentanz’s manager at the iconic Oxfordshire bakery, De Gustibus, which is often claimed to have been the original artisan bakery.
