Alasdair Day is co-founder of the fabulous new Raasay Distillery with its statement gold roof and views over to the Cuillin in Skye that are so majestic they take your breath away The flavour of the whisky is lightly peated and fruity - which hopefully suits the animals on the island too, as the draff (a by-product of the ground-up malted barley used in the distilling process) is given to the local crofters to feed their livestock. The distillery is based at Borodale House, which used to be the estate manager’s house for Raasay estate.
