Laura Rankin, who lives on the south west coastline of Skye at Ostaig, has baked for local cafés for a couple of years now. In Broadford she supplies Deli Gusta and An Crubh café on the way to Isle Ornsay. Laura is an extremely talented self-taught baker whose repertoire does not stop at simple sponge cake and scones. Her baking is modern, contemporary and utterly delicious; her cakes are not only baked, they are also served raw.

One of her specialities is a raw vegan cheesecake that is flavoured with local brambles from Tarskavaig. This is particularly popular with tourists and locals alike with allergies or who are vegans. Her apple rhubarb cake is a joy to behold - and to eat! It is made with apples and rhubarb from her husband Graeme’s mum Rosie’s garden in Achnacloich. The eggs she uses in her baked cakes are also local, from Tarskavaig.
