Many different varieties of both fresh and dried mushrooms – hed – are often used in Thai cooking. As well as cultivated mushrooms, wild mushrooms are gathered during the rainy season, especially in the north of Thailand. These include ceps, chanterelles and russulas, which are used for salads, soups and sauces.
