One of the distinguishing features of Thai cuisine is the way in which a combination of flavourings is used to achieve precisely the desired taste in a dish. Every herb, spice or aromatic ingredient listed is there for a reason. When cooking, it is important to use the specified item wherever possible to achieve the correct balance. Of course, it isn’t always easy to locate specific Asian herbs and spices, but there are some acceptable substitutes.
