In Thailand, soups are not seen as curtain-raisers, but are served throughout the meal, providing the palate with tastes and textures that complement or contrast with those in more dominant dishes. You may choose to serve any of these soups solo, as a light lunch or supper dish, or as a prelude to a dinner party, but however and whenever you place them before your guests, treats like Cellophane Noodle Soup and Northern Squash Soup are certain to prove popular.
